Easy low carb / keto muffins, with Greek yogurt and without sugar, sweetened with erythritol.
Wet ingredients:
1 natural Greek yogurt
3 medium eggs
1/4 cup whole milk
2 tbsp melted butter or melted coconut oil.
1/2 tsp vanilla essence (optional)
Dry ingredients:
1/2 cup ground almonds
1/4 cup coconut flour (you can avoid it and only use ground almonds).
3 tbsp erythritol (if you use another, adjust the amount according to the manufacturer).
Mix by one side the wet ingredients and on the other the dry ingredients, mix everything to form the dough.
Fill the molds and bake at 180 ° C for between 25 and 30 min. The time depends on your oven.
What you should keep in mind:
- This recipe contains dairy products, such as yogurt, but if you prefer to avoid them, you can use a vegetable milk, almond milk, or oat milk, for example. If you know traditional cooking, you will know that the use of milk or yogurt in some cake batters is very common. This ingredient provides moisture to the batter, flavor, and makes it fluffier, but as I have already mentioned, you can substitute it with a vegetable milk and it will also be fine.
- If you are allergic to nuts, use cereal flour with a low glycemic index or focus on other recipes like this one.

Ingredients
Ingredientes húmedos:
- 125 g yogur griego natural
- 180 g huevos M (3 unidades)
- 1/4 taza taza leche entera
- 1 cda mantequilla derretida o aceite de coco derretido.
- 1/4 cdita esencia vainilla (opcional)
Ingredientes secos:
- 1/2 taza almendra molida
- 1/4 taza harina de coco (se puede evitar y poner solo almendra molida).
- 3 cdas eritritol (si usas otro ajusta la cantidad según el fabricante).
Instructions
- Mezcla por un lado los ingredientes húmedos.

- Une todo para formar la masa, cuanto más uniforme, mejor.
- Rellena los moldes y hornea a 180°C entre 25 y 30 min. El tiempo depende de tu horno.
Notes
- Para evitar los lácteos sustituye el yogur por leche vegetal.
- Para evitar los frutos secos, sustituye la almendra molida por harina de avena, pero ten en cuenta que las medidas no serán las mismas.
