Sugarless fig compote.
This summer the fig tree in my garden has decided to give me a few kilos of figs, before such situation I had no choice but to prepare several recipes in which this delicious fruit is the main ingredient, in this post I will teach you how to prepare a tasty sugarless fig compote, flavored with cinnamon and vanilla, without adding sugar, with the taste of fig as the only protagonist.
You can use this compote in other preparations or take it as if it were a jam, on a slice of almond biscuit or about a biscuit base also made with almond, with a little butter is delicious.
In a cheese board it is ideal to accompany, giving the sweet counterpoint to the strong flavors of goat cheese, blue cheese or any cured cheese, but at the same time it combines very well with cottage cheese, with fresh cheese, Greek yogurt or with mascarpone.
The fig is a fruit with many beneficial properties, tasty and healthy, a classic of the summer and autumn months.
If you prepare homemade sugar-free compotes with your favorite fruits, avoid taking commercial jams full of sugars and other unwanted ingredients.
I will give you ideas to take advantage of this fruit, it is very perishable, it breaks down immediately once harvested and the most usual way to consume it is as it is, in fact, there are not many traditional recipes that include it, but it is not difficult integrate it in many dishes, sweet or savory, (I like them a lot in salads).
They are also usually taken dry, the problem of dried figs is that their percentage of sugars is much higher, they contain 47.2 gr of sugars for each 100 gr of product, compared to the 16.26 gr for each 100 gr of the fresh figs, without doubt it is preferable to consume fresh figs.
One of its main characteristics is that they are very digestive, this is because they are rich in a substance called cradina and they also contain a lot of fiber.
To prepare this sugarless fig compote you just need a good amount of fresh figs, a cinnamon stick, a vanilla branch, a splash of lemon juice and water. It is cooked for 25 minutes at moderate heat, the spices are removed and crushed.
Pack the compote in glass jars and let it cool, store in the refrigerator. When the compote has settled, the flavors will have mixed and you can enjoy it.
At breakfast on toast or cake, with or without butter. In the meal to accompany a meat, for example, a pork tenderloin.
The compote of sugar-free figs is perfect at breakfast, replacing the usual jam, it combines very well with Greek yoghurt, with cheeses and meat dishes.
Include this compote in your cheese board, with goat cheese is a delight, present your selection of cheeses, cut a few fresh figs and add a small bowl with the sugar-free fig compote, spectacular !.
For dessert you can prepare a fig cake, yogurt ice cream with figs and compote or a fig jelly, there are many possibilities !.

Properties and benefits of fig:
- Very digestive, they contain cradin, citric, malic and acetic acid
- They are rich in fiber which helps intestinal transit, they contain mucilages, which are carbohydrates accessible to the microbiota. (Macs)

Figs stand out for their high fiber content, but they are very rich in sugars, so be careful when consuming them.
Why I like this recipe so much:
- Because it replaces conventional jam, even though figs are rich in sugars, taking it in moderation is much healthier than any traditional marmalade.
- It can be used in many preparations, at home we take it at breakfast, at dessert (in pies and ice cream), with cheeses and in meat dishes.
- It is very easy to prepare, you only need 6 ingredients.
- It has a lot of fiber.
- It is very digestive.
You can include this compote of figs without sugar in other preparations, such as a cake or sponge cake.
Uses that can be given to fig compote without sugar:
- Breakfast: to substitute the usual jam, to drink with yogurt or in a açai bowl with chia and other fruits.
- Appetizer: on canapés with goat cheese or with some pâté, with foie is a delight.
- Lunch / dinner: in a rocket salad with walnuts and goat cheese, add fresh figs and some touches of compote, you can also add it to the vinaigrette. As an accompaniment to a meat.
- Dessert: prepare a homemade ice cream with Greek yogurt and fig compote without sugar, you can also make an almond cake as a base and assemble the cake with mascarpone, compote of figs and fresh figs, your guests will hallucinate.

Ingredients
- 750 grams Fresh figs in quarters
- 400 ml water
- 1 cinnamon stick
- 1/2 vanilla bean
- 1 teaspoonful lemon juice
Elaboration step by step
- The first thing you should do is wash the figs and cut them into quarters, it is not necessary to peel them, consuming them with the skin gives us much more fiber.
- Put them in a medium saucepan, add the water.
- Open the vanilla pod and remove the seeds very carefully, add them to the pot, add the cinnamon stick and the 1 / 4 lemon juice.
- Light the fire and when it starts to boil, lower it and let it cook for 25-30 minutes.
- After that time, remove the cinnamon stick and the vanilla pod, crush and pack in glass jars, close and let cool to room temperature.
- Store the compote pots in the fridge, they will keep without problems for at least a week.

Answering your question, of course you can do preserves, for this you must have a series of precautions and follow the appropriate steps, it is quite easy. The first thing is to sterilize the glass jars where you are going to make the preserve, you must boil them for 15 minutes in water and let them dry well. When you have the compote made, fill the jars making sure that there is no air inside, you must "squeeze" the compote with a spoon to eliminate air bubbles, fill them to the top and close well. When you have all your compote packed, you must place all the cans in a pot with boiling water for 30 minutes, (bain marie). After that time, you let them cool down to room temperature and store them in a cool, dry and dark place. If this technique is done right, the canned compote has an estimated shelf life of one year. If air enters any of the cans, it could be damaged, so you have to look carefully each time a can is opened and make sure it is in good condition. How would you recommend using this with cake? If I made an almond cake, would I do two layers and put the compote in between and frosting on top or do 1 layer with the compote on the frosting? Thank you

Hi Olivia, I recommend using the fig compote in various ways. As you mentioned, you can place it between two layers of the cake, this way, the cake will turn out beautiful.
But you can also use the compote to sweeten the batter, in that case, the batter will have a darker color. If you choose to place the compote on top of the cake, you won't need the frosting, just decorate the cake with fresh figs and other fruits.
