GLUTEN-FREE CAULIFLOWER TORTILLAS
More cauliflower! This time to prepare the dough of delicious tortillas, I assure you that they are incredible, they are more digestive and light, they are gluten free, with less carbohydrates and more proteins.
Given that the classic corn or wheat tortillas are always very appetizing, I decided to try to prepare them with cauliflower instead of corn or wheat flour.
The tortillas are ideal for a gathering of friends or family, leave the tortillas on the table, prepare different fillings, and that everyone enjoys them as they want, guaranteed victory.
They are very versatile because it doesn't matter if your guests are omnivorous or vegetarian, depending on the filling, they adapt to any type of diet.
I have prepared a different version, the two main ingredients are cauliflower and tapioca starch, which mixed with egg and seasoned with onion powder and sea salt, form an elastic and tasty dough.
Gluten-free cauliflower tortillas are low in carbohydrates and lighter.
Would you like to learn how to prepare them? It is easier than it seems, you only need cauliflower, eggs and some starch to help give consistency and “stretch” the dough, I used tapioca.
To add flavor, you have to add salt and spices, I also like to put onion powder because it gives a delicious point.
Perhaps the most difficult part of this recipe is to make the dough flexible enough to bend slightly and not break.
As I have told you on other occasions, in traditional doughs prepared with corn or wheat flour, the component that gives this elasticity is gluten.
Gluten is a protein and gives elasticity and fluffiness to the doughs that are prepared with flour from the cereals that contain it.
Gluten-free doughs are less elastic and spongy than traditional doughs.
When we make a dough with gluten-free flours, for example nuts, chickpeas, tubers and roots or use vegetables such as carrots or cauliflower, we lack gluten, so we lack elasticity.
With the egg and a starch it is possible to improve something, but sometimes it is not enough, there are some products such as psyllium or xanthan gum that help in this task.
But if we also want to do without the egg, for a vegan option, the thing is complicated, a good substitute for the egg is flaxseed, (ground flax), mixed with water, which results in a viscous mixture and helps amalgamate the dough.
So that the dough of these cauliflower tortillas has the right consistency I have used eggs and tapioca starch, you can also use arrowroot or flaxseed.
All you have to do is mix all the ingredients in a kitchen robot, and when the dough is consistent, take all the same handfuls and form the tortillas by crushing them on a baking paper.
Give them a round shape and try to make them thin, bake the tortillas at 200ºC for about 10 minutes, then you have to turn them over and continue baking, 5 minutes more.
To know if they are already, look at the edges, when they brown, you already have them. When you take them out, the ideal thing is to cool them on a rack, so that the air circulates and does not soften too much.
They can be consumed as is or if you keep them for later, they can be heated in a pan, 1 minute on each side so that they are again a little more flexible.
I prepared cauliflower tortillas to replace the classic “cocas de dacsa”, typical of the regions of La Marina (Alicante/Costa Blanca - Spain).
Fill the tortillas with whatever you like, I made them to replace the classic ones "Cocas de dacsa" of the Marina and stuffed them in the traditional way.
The "Cocas de dacsa" They are fine corn tortillas, very popular in this area, which are usually filled with grated natural tomato, grated cooked egg, anchovies and bonito with a few drops of olive oil.
But the cauliflower tortillas that I propose you can also fill with meat, vegetables, salad and you can give them the touch you want.
I will tell you more, changing some of the ingredients, you can fill them with something sweet, such as fruit, compote, dark chocolate, some yogurt, even with some healthy ice cream. For that remove the onion powder and do not put salt, you will have a more neutral flavor.
As you can see it is a very versatile base recipe, when you make them, make a good amount, you can store them several days in the fridge and they can also be frozen.
You can fill cauliflower tortillas with salty foods, but also with fruit, compote, yogurt or chocolate.
Ideas to fill your tortillas:
- Carnitas.
- Rooster's beak
- Guacamole
- Sour cream
- Beans (red beans)
- Chicken in strips with vegetables and spices.
- Classic La Marina stuffing consisting of a combination of: grated natural tomato, grated cooked egg, bonito and anchovy.
- Fruit, yogurt, compote, chocolate ice cream.
Properties and benefits of cauliflower for our health:
- It is diuretic, high in water and low in sodium. If you suffer from hypothyroidism you should control their intake.
- It is good for treating hypertension and fluid retention. If this is your problem reduce the salt of the recipe and add more seeds, they will help you to flavor without problems.
- Low in calories, it is low in carbohydrates, proteins and fats. Ideal in low carb diets and for weight loss.
- It has a lot of fiber.
- It contains vitamins such as vitamin B6, B5 and folic acid.
- It is also a source of potassium and phosphorus.
Why I like this recipe so much:
- It helps me get organized: I prepare a good amount and keep them for a few days.
- Feel great: Low in calories, low in fat and very digestive.
- Very versatile, I can fill them with anything, it can also be a vegetarian dish, even vegan if the egg is replaced with flaxseed and water.

GLUTEN-FREE CAULIFLOWER TORTILLAS

Ingredients
- 300 grams minced and cooked cauliflower (1 small cauliflower)
- 130 grams egg (2 eggs)
- 1 tbsp tapioca starch
- 1/4 teaspoonful onion powder
- 1/2 teaspoonful sea salt
Elaboration step by step
- Wash the cauliflower, cut it, use only the flowers and crush it in your kitchen robot.
- Put the processed cauliflower in a microwave-safe container and cook for 2-3 minutes at 800W.
- Preheat oven to 200ºC
- Put the cauliflower back in the robot and mix with the eggs, tapioca, onion powder and sea salt.
- When the mixture has consistency, take small handfuls of dough, the more equal the better, and go crushing them on a tray lined with baking paper. Smash with your hands in a round shape.
- Bake at 200 ° C for 10 minutes, turn them over and bake 5 minutes more. To know if they are, look at the edges, when they brown, you already have them.
- Remove the tortillas and let them cool on a rack, it is very important that the air circulates and does not soften.
- If you are going to consume them right away, they are ready, but if you keep them, you can pass them through the pan before serving them, so they will become a little more elastic.
- The last step is to enjoy them. 😉
Notes
- If you are vegan and do not consume eggs, you can substitute a mixture of flaxseed and water.
- Fill the tortillas with what you like best. Remember that if you are going to take them with fruit or yogurt for breakfast, it is better that you do not put the onion powder and reduce the amount of salt.
- You can store the tortillas for several days in the fridge, you can also freeze them, for that you must put a piece of baking paper between them, so they do not stick.

Hello Jesus, I know, corn is also gluten-free, and corn tortillas, obviously, are also gluten-free, what happens is that I do NOT usually consume it, nor its starch. In this recipe I used cauliflower and tapioca starch, (a starch that comes from a tuber and is more suitable for diabetics than corn). I titled the post "Gluten-free cauliflower tortillas" because it is a good way to describe them, although their main characteristic is "low in carbohydrates" (lowcarb), the fact is that using cauliflower and tapioca greatly reduces the carbohydrates in the recipe and they are much lighter.
