
KUMQUAT WITH CHOCOLATE AND COCONUT
The kumquat or Chinese orange is delicious, if you cover it with dark chocolate and sprinkle a little grated coconut, the result is a squared delight.
Surely you already know what fruit I am talking about, it is about those tiny oranges that, curiously, are sour on the inside and sweet on the outside, their skin is sweet, it is just the opposite of what one would expect, right?
Many people don't like kumquat, too acidic! Most say, but I have another theory, and that is that the texture plays a role.
For me, the reason why kumquats are often disliked is because they are eaten whole, and no one would expect to eat an orange with its skin on, right?
The orange peel is very bitter and that causes us to reject it a lot, it is unpleasant to bite into it, and even more so to chew on it.
For this reason, when we see a kumquat, an orange comes to mind, and of course, the last thing you would think of would be to take a bite.
But that idea must be changed, because in the case of the kumquat, its skin is fine and sweet, yes I repeat, fine and sweet.
Putting it in the mouth produces a wonderful effect, the center of the kumquat, juicy and acid, explodes to mix with that sweet and fine skin, the mixture is perfect.
I wanted to use this very special fruit to prepare a very special recipe.
Kumquat and dark chocolate go together perfectly, their flavors contrasting and complementing each other at the same time.
The idea was to prepare a snack with contrasting flavors and textures.
And what flavor perfectly contrasts with orange and also complements it? Without a doubt, chocolate, and if it is black, better.
That's why I decided to prepare a dark chocolate coating, cover the kumquats and then sprinkle them with grated coconut, I assure you that the result is a spectacle.
It is obvious that kumquat is easy to get in my area (Mediterranean area), where it is cultivated in many orchards and even gardens, you can also buy it in the markets, but it is almost certain that someone around you has them and does not give them the use it should.
It has become a rather decorative fruit, it looks great in many dessert dishes, gives color and makes it prettier, but few people consider it a fruit worth eating on its own.
That is why my intention is to overthrow this myth, the kumquat is a delicacy that can be consumed as such, it is a snack fruit, just as you eat a strawberry, you can eat a kumquat.
The kumquat is known as the Chinese orange, and as such, it shares its nutritional properties.
The kumquat or chinese orange, has nutritional properties very interesting.
They are rich in vitamin C and fiber, so it can be said that it is a fruit with high antioxidant power and very satiating.
Being rich in vitamin C they will facilitate the absorption of iron from the diet. (Remember that foods that provide vitamin C facilitate the absorption of iron, while foods rich in calcium compete with iron for its absorption, which is why they make it difficult).
It is a citrus fruit, so in addition to vitamin C, it provides folic acid and potassium.

KUMQUAT WITH CHOCOLATE AND COCONUT
Ingredients
- 12 kumquats Chinese orange
- 150 g chocolate 85% cocoa or more
- 1/2 cup 18% fat cream cooking cream
- 25 g butter
Elaboration step by step
- Break the dark chocolate bar and put it in a bowl, add cream and heat for 30 seconds at 600W in the microwave.
- Mix the chocolate with the cream and as it will remain thick add more cream, the amount is approximate, it should be thick, but liquid. Heat 30 more seconds.
- When you see that the chocolate has the desired texture, add a knob of butter and stir, this will give it a lot of shine.
- When it is at room temperature, cover the kumquats and let them cool in the fridge.
- When the chocolate coating is solid, cut them in half and sprinkle with grated coconut, serve in dessert.
