Dairy-free Cucumber Soup
Cold soups are always an easy and healthy resource when preparing a menu, especially in summer, when very hot dishes do not appeal. The gazpacho is the best known and the most served both in homes and restaurants, cucumber is one of the ingredients that can not be missed in a good gazpacho, in this post I will explain how to prepare a cucumber soup no dairy so you can vary and do not get bored with the usual.
When we talk about cold soups the protagonist is gazpacho, but there are many more options, like this cold cucumber soup without dairy.
If I like something from gazpacho, it is that it does not contain dairy, if you also avoid adding bread, the mixture is very healthy and much more digestive and light. Precisely that is what I like most about the soup that I propose today, which can also be made without using dairy products. It's not that I do not like them, nor do I avoid them completely, but I do not like to abuse, so if it is possible to prepare a recipe without them I do it.
To prepare a cold cucumber soup without dairy You need very few ingredients and the result is great, fresh and tasty. I like to mix the cucumber with some other fruit, it really is not necessary, but it makes the flavor much softer, I usually add apple and the truth is that it combines perfectly, gives it fiber and makes the mixture acquire more body, Do not bring yoghurt or milk cream, it will always be more liquid, this way it helps to thicken more. To add flavor, add a little garlic and a few drops of lemon, olive oil and sherry vinegar are essential, salt, pepper and to decorate some sesame seeds, tomatoes, boiled egg or olives. The lemon is important, will make the apple will not rust and will prevent it from darkening.
Cucumber, apple and garlic, a winning combination, try and see!
I love how the vinegar tastes with the cucumber flavor! Since I was little I love cucumber salads with olive oil, vinegar, salt and green olives, so this soup is a tribute to that salad that my mother prepared us many times as a refreshing accompaniment.
Making the soup is the easiest, you just have to shred the ingredients, the cucumber, the apple, the lemon juice, the garlic, the oil, the vinegar, the salt, the pepper. Try and adjust the seasonings to your liking, it is always better to add the garlic and vinegar with caution and throw more if you consider that you need it. In case you see that the soup is very thick, you can add a splash of cold water until you get the desired texture.
To finish, put it in a nice bowl and sprinkle some sesame seeds and a minced tomato, boiled egg and even green olives, it is delicious.

I never thought of a cold cucumber cream but the idea seems great to me.

Hi Silvia, the cold cucumber and yogurt soup is a very common recipe in summer, I in this case wanted to avoid dairy as an alternative for those who do not tolerate them or do not feel good. I'm glad you like the idea. Thanks for your comment. 😉
