sugar-free almond and chocolate biscuits

To do the unsweetened chocolate and almond biscuits I use a product that is not yet very popular here in Spain, although it is easy to buy it in any organic products store or in herbalists, I mean the almond butter, it is a pasta made with a part of raw almonds and another of toasted almonds, the mixture of the two is what gives it a more intense and special flavor. This almond paste is quite caloric and energetic, but very healthy. Mixed with other ingredients we get incredible textures without the use of refined wheat flour, so it is an ideal alternative to prepare cakes and cake bases without flour.

Prepare your own almond butter, save money and control the ingredients

The unsweetened chocolate and almond biscuits that we are going to prepare are mini, it is small portions of energy that will be very useful as a snack both before and after training, thus avoiding commercial energy bars, full of sugars and other unhealthy ingredients. Depending on your energy expenditure you can accompany them with a banana or an apple and you have a perfect snack.

I usually make the almond biscuits with dark chocolate 85%, the bitter point that pure chocolate brings me love, but there are other alternatives, you can cut dates into small pieces, you can add some sultanas, dried cranberries, the options are endless .

Benefits of chocolate 85% cocoa:

Besides being delicious chocolate has beneficial properties for our health, to make sure you always choose a chocolate with a high content of cocoa, I always use chocolates that contain between 81% and 99% cocoa. Normally I prefer the 85% chocolate which, being bitter, is very pleasant on the palate. The amount of sugar in its composition is very low, so we can consume it without remorse, but in moderation, keep in mind that chocolate has enough calories, and although these are not the only thing to consider, they matter, so you do not exceed.

Among its benefits, it should be noted that it is good for the circulatory system, it is an antioxidant, it has an anti-cancer effect and it is a brain stimulator. It is known to reduce insulin resistance, is antidiarrheal and natural cough suppressant.

One of its most surprising properties is that it improves cognitive ability, due to its stimulating effect since it contains caffeine.

Knowing all this, do not you think it's interesting to include it in your recipes?

For your almond and chocolate-free biscuits without sugar, use a quality chocolate, with a high percentage of cocoa, at least 80%

Almond butter, as I said at the beginning of the entry, is a paste made with a part of raw almonds and another of toasted almonds, in general the mixture consists of a raw 80% almond and an 20% toasted almonds , although it may vary depending on the brand you use. • 2 cda soup almond butter
  • 2 cda soup Almond flour
  • 2 cda soup shredded coconut
  • 2 cda soup birch sugar (xylitol)
  • 4 cda dessert melted coconut oil
  • 2 ounces Black chocolate 85%

Elaboration step by step

  • In a medium bowl beat the eggs, add melted coconut oil and birch sugar (xylitol).
  • Add the almond butter, try to integrate it into the mixture. Use a fork or small rods and shake well.
  • The mixture is still very liquid, you have to thicken it, add the ground almonds and the grated coconut little by little. You must get a thick mass. *
  • It is time to add 85% * chopped chocolate to the dough, mix well.
  • Preheat the oven to 200ºC for 10 minutes.
  • Prepare a baking sheet, shape it with a sheet of baking paper or use a silicone baking sheet, the goal is that the biscuits do not stick.
  • With two soup spoons, distribute the dough * in piles all over the surface, leaving enough space between them to avoid sticking when they are cooked.
  • Bake for 15 minutes at 180ºC, it may be a little less if your oven is very powerful.
  • Take them out of the oven and let them cool for at least 10 minutes. They are ready now! Devar and if you have any, which I doubt, keep it in an airtight container, if you leave it in the refrigerator can stand up to four days without problem. Health! 😉

Notes

*If the dough is too thick, you can lighten it a bit with a splash of water, milk or almond drink, you choose. If on the other hand it is too liquid, add more ground almonds or more grated coconut.

* If the dark chocolate does not go or you just prefer to avoid it, you can add some dates cut into pieces, some sultanas or a grated apple, they will bring natural sweetness to the dough.

* If you see that the dough is very soft you can let it sit in the refrigerator for about 15 minutes before baking it.
