
Sugar-Free Vegan Apple Oatmeal Muffins
Thinking of making a healthy version of the famous apple strudel, I have got these oatmeal and apple muffins that have little to do with the famous German cake, but which are delicious and perfect for breakfast.
My intention was to try to create a kind of healthy strudel in portions, for this, it was necessary to avoid a number of ingredients, the main ones, sugar and flour.
My plans also included not using eggs and replacing them with some vegetable ingredient that could fulfill their function.
These sugar-free oatmeal and apple muffins do not contain flour or eggs, it's hard to believe, right?
You may wonder why so much restriction, how easy it is to make muffins following traditional patterns, very simple, so that anyone can take them.
These muffins can be taken by diabetics, lactose intolerant, egg, people who follow a weight control diet, also enter vegetarian and vegan diets and despite meeting so many requirements are delicious.
If you ask me about gluten I will tell you that some gluten intolerant can take it, but not all, so it depends on each person.
Oatmeal does not contain gluten, yet many celiacs do not tolerate it.
The reason is that despite being a cereal that does not contain gluten, it is easy that there has been a cross contamination due to having been in contact with traces of other cereals, to avoid this, you must purchase an oatmeal that clearly specifies in the container It is gluten free.
But there is another question, and it is that oat protein has a structure very similar to that of gluten, this makes the immune system of some celiacs identify it as such and react in the same way.
To make these muffins I have used almond milk, but if you are intolerant of nuts you can use a coconut or soy milk, there are always other options.
Do you know how to get the dough to amalgamate without using eggs? An excellent solution to this problem is offered by flax, adding a tablespoon of golden flax seeds the problem is solved.
These oatmeal muffins carry flax seeds. Did you know that flax is the vegan egg substitute?
The flax seeds in contact with the water release a gel that makes them "sticky" and that they manage to amalgamate the dough without needing to add egg. You can see the same effect in the mass of these Flourless seed crackers.
Thanks to its gelling power, from a technological point of view, we can say that flax seeds are the substitute for eggs in all types of doughs for cookies, pancakes, biscuits, etc.
Do not expect this dough to be spongy because it is not, keep in mind that it is oatmeal soaked in vegetable milk, well flavored with vanilla and cinnamon, yes. As an apple and caramelized raisins with coconut sugar.
What advantages do these muffins have:
- They are very satiating. If you take them for breakfast, you endure several hours without starving.
- Suitable for lactose intolerant, they are made with vegetable milk.
- They are suitable for diabetics, do not carry cane sugar or sweeteners with a high glycemic index, I have used coconut sugar, but you can also use erythritol or xylitol.
- Suitable for egg intolerant. I have used flax seeds to replace it.
- If you are intolerant of nuts you can use soy milk or oatmeal.
- Suitable for vegans and vegetarians. They do not contain dairy or animal fats. Use coconut oil to caramelize the apple and raisins.
- They stay in perfect condition for at least a week if you store them in the fridge, they help you organize.
- You can take them to the office or take them "on-the-go", very practical.
- Being portions, you take your ration and the temptation is over. 😉
For all these reasons and because they are delicious, I recommend them for a simple and delicious breakfast, you will love it! 😉

Ingredients
For the muffin dough
- 1 cup oatmeal
- 1 cup almond milk
- 1 tbsp flax seeds
- 1 tbsp sultanas raisins
- 1/4 tsp vanilla essence
- 1/4 tsp ground cinnamon
- 1 tbsp coconut sugar
- 100 grams grated golden apple (1 apple)
- 1 pinch sea salt
For the topping
- 100 grams chopped golden apple (1 apple)
- 1 tsp coconut oil (or butter)
- 1 tbsp sultanas raisins
- 1/2 teaspoonful coconut sugar
Instructions
- In a bowl add the oatmeal, flax seeds, raisins, vegetable milk, coconut sugar, grated apple, pinch of salt and spices. Mix well and let stand for about 30 minutes.
- Preheat the oven to 200ºC for 10 minutes.
- Prepare the muffin tray, cut pieces of square baking paper, all the same, put a piece of paper in each hole, help yourself with a glass to make pressure and shape them.
- With a spoon of serving ice cream put a dose of dough in each hole. You can also use another type of spoon, the idea is to try to put the same amount of dough, so that the portions are uniform.
- Bake for 15-20 minutes at 190 ° C only with air.
- After that time, add some caramelized apple with raisins on top of each serving.
- Bake the 5 muffins for another minute.
- Let cool and enjoy this delicious breakfast, you will love it.
Notes
- I used golden apples, with reineta apples can also look great.
- As a sweetener I have used coconut sugar, which is natural, but has a lower glycemic index than cane sugar and panela. If you want a sweetener that does not affect blood glucose and is alkaline, I recommend erythritol, which does not add flavor and perfectly withstands high temperatures.
- To caramelize the apple used as a topping, you can use coconut oil or butter. As a sweetener, coconut sugar.
