
KÉFIR TORTILLAS (GLUTEN FREE)
These omelettes or kefir pancakes are ideal to fill with vegetables, meat, fish, you can even have them for breakfast with kefir, yogurt, fresh fruit, homemade compote, etc.
They have only 4 ingredients, ground almonds, coconut flour (not grated coconut), tapioca starch, kefir and many spices.
Depending on the spices you put on them, the tortillas will have one flavor or another, you can put dried oregano, thyme, onion and garlic powder, pepper and salt.
But you can also choose to add vanilla essence, cardamom, ground cinnamon and give them a sweeter touch to accompany them with fruit and yogurt.
As a liquid element, in addition to water, I have used homemade kefir, the reason is very simple, when you produce kefir at home it is normal that you have excess, and you have to find ways to use it.
Kefir has a very different taste than milk, it is fermented milk with kefir granules.
These tortillas have kefir, a way to take advantage of the excess of homemade production.
Kefir granules are made up of an ecosystem of microorganisms based on bacteria and fungi, specifically bacteria of the genus Lactobacillus acidophilus and yeasts (fungi) Saccharomyces kefir.
These granules ferment the milk in a relatively short period of time, between 24 and 48 hours, so the resulting kefir must be consumed regularly.
It is best to consume kefir as is, that is evident, its organoleptic qualities are appreciated and you benefit from the live microorganisms it contains, it enriches your microbiota and improves your intestinal health, that is what it is about!
It is very important to know that heat destroys all those microorganisms, so if you use kefir in preparations that need cooking, no matter how minimal, you will no longer benefit from them.
Using kefir to make tortillas or pancakes, you can add flavor, taking into account that if you prepare kefir at home you will end up having an excess production, it is fine to use it in different recipes and preparations.
This that I have just explained to you is what usually happens to me, that I cannot cope with consuming everything I produce, that is why many times I give it out in other recipes, in addition to giving it to friends and family, of course, you always have that way open and very satisfactory.
If you don't have kefir, use milk, or water, you can also add eggs, it is a very versatile recipe.
When preparing these tortillas, the most important thing is to get the consistency of the dough right, you have to mix the dry ingredients and then add the kefir and water little by little, until you get a liquid dough, but a little thick to the time.
As these kefir tortillas do not contain eggs, the ingredient that will give consistency to the dough is tapioca starch, which could be substituted for ground flax, obviously you can add an egg to the dough, (in that case, you will need less quantity of Water).
If you do not have kefir, use cow's milk or a vegetable milk, you can also use only water and to make the dough softer add a fatty ingredient, you can put coconut oil or olive oil.
The best of all is that when the dough is ready, make them in a moment, heat a pan and grease it, with coconut or olive oil, add dough, spreading well over the entire surface, cook for about 2 minutes over moderate heat and give them turn around, another minute and that's it.
You can make a good amount and save them for the next day, stored in a lunch box or covered so they do not dry out.
To fill them there are many options, from a chicken curry, a stir-fry of pork with mushrooms and vegetables, to a beef with spices or the classics pork carnitas Mexican style.
Guacamole, pico de gallo, salad, carnitas, stir-fries, chicken curry, are good options to fill them up.
Prepare a homemade guacamole, a pico de gallo, and serve a bowl with kefir to serve as sour cream, good idea, right?
It is also a good idea to prepare a hummus, it is delicious accompanied by these tortillas.
It is important that you prepare a salad, with green leaves, spinach, lettuce, fermented onion, whatever you can think of, to add a fresh touch to the filling.
It's great to put everything on the table and allow everyone to assemble their tortillas, making the combinations that they like best.

KÉFIR TORTILLAS (GLUTEN FREE)
Ingredients
- 1 cup Almond flour
- 1/4 cup tapioca starch
- 1/4 cup coconut flour Grated coconut does not work
- 1/2 teaspoonful sea salt
- assorted spices Optional, choose the ones you like the most
- 1/2 cup homemade kefir If you don't have, use cow's or vegetable milk
- 3/4 cup filtered water
- 1 tbsp coconut or olive oil
Elaboration step by step
- In a bowl add all the dry ingredients and mix well.
- Add the liquid ingredients, the kefir, the water and the oil, mix well until you get a homogeneous mass.
- Heat a frying pan and add a few drops of oil, put 2 tablespoons of dough and flatten it into a rounded shape, don't worry if they are uneven, so you will notice that they are homemade.
- Cook 2 minutes on one side and turn them over, continue cooking 1 more minute, reserve the tortillas on a plate.
- Fill the tortillas with your favorite ingredients, they are tender and juicy, they combine with everything.

Hello Marta, I don't know if you have used tapioca starch, that is the ingredient that makes the dough stay together, adding an egg has been easier for sure. Congratulations on your recipes! I made these pancakes yesterday and the flavor came out of ten. But I am tough about the consistency of the dough so that they are just right. They did not come out elastic enough to roll up and put something inside, rather to spread or put something on top. I used cornstarch. Any advice? Thanks!

Hi Raquel, the consistency of the dough can vary a lot depending on the ingredients, I use tapioca starch that helps make the dough more elastic, the corn starch is not the same. Sometimes it also depends on how moist the dough is, remember that in this recipe it has to be liquid (similar to the dough for crepes). What is usually used in gluten-free dough is linseed, because in contact with water it forms gels, but be careful because it leaves flavor, you have to put a small amount.
