
CURRY WITH PRAWNS VERY EASY
When the heat stops being the protagonist, spoon dishes, soups, broths and my beloved curry come to mind. In this post I want to show you how to make a curry with prawns very easy.
I like mild curry, that does not mean that I do not like spicy, what I do not like is that the protagonism of the dish is just that, I love noticing flavors and being able to appreciate each of the ingredients.
For this reason, I love to prepare curry with coconut milk, which I usually mix with a fish stock or with a poultry or vegetable broth, depending on the other ingredients.
In this recipe I have used a homemade vegetable broth, very light, and I have given it the creamy texture with the coconut milk, the prawns do very well.
To make this curry with prawns, use a prepared mixture of spices and add coconut milk.
As for the curry, I have used a mixture of spices already prepared, you can find many in the market, buy a quality one and thus ensure a good flavor.
A curry powder should always contain turmeric, pepper, chilli, mustard seeds, coriander seeds, etc. The curry powder that I use has more spices, and the flavor and aroma is spectacular.
As I started by saying, it is a very easy curry, the idea is to prepare it in a short time, if you have vegetables, broth, coconut milk and prawns, you only need the mixture of spices and get to work.
If you change the prawns for chicken, you get an equally rich chicken curry, you could also do it with lamb, that easy.
It will take about 20 minutes to prepare it and the result is a delight, a tasty and comforting dish, one of those that are etched in your memory and make you want to repeat in a short time.
The preparation is very simple, fry the vegetables, add the mixture of spices, the broth, the coconut milk and finally the fresh prawns or prawns.
If you do it with chicken or lamb meat, the first step would be to mark the meat, remove it and follow the previous steps, adding it again at the last moment.
This curry is a quick and comforting stew, perfect for the whole family.
Do not think that this dish is only for adults, I already tell you that it is not, I have emphasized from the beginning that the result of this recipe is a curry with soft prawns, it bites depending on the amount of curry you put in it, in addition to the milk coconut gives it a very pleasant softness.
For that reason it is a suitable recipe for the whole family, prepare it with your favorite ingredients, as for vegetables I usually put chives, mushrooms, carrots, broccoli or cauliflower.

Coconut milk is obtained by crushing the mature coconut meat, as a result it gives a very tasty milky cream.

CURRY WITH PRAWNS VERY EASY
Ingredients
- 12 peeled shrimp tails Fresh or frozen
- 50 g leek 1 pc
- 50 g chive 1 pc
- 50 g carrot 1 pc
- 150 g mushrooms Half tray of 250 g approx.
- 150 g broccoli Just the flowers
- 1 tbsp Tomato paste
- 2 cup vegetable or fish broth
- 1 cup coconut milk
- 1 tbsp curry powder Indian style spice mix
- 1 pinch sea salt
- 1 tbsp olive oil or coconut oil
Elaboration step by step
- Sauté the julienned vegetables with the olive or coconut oil. First the chives, the carrot and the crushed garlic. Add a little salt.
- Then add the tomato paste and mushrooms.
- Add the curry, I use an Indian style spice mix with turmeric. Give it a few laps and make sure it doesn't burn.
- Add the broth, I put a glass and a half, about 400 ml, it is equivalent to about 2 cups.
- And finally add the broccoli flowers and a cup of coconut milk (237 ml approx). Let simmer for 10 min.
- Mix well and taste, if you need salt, rectify.
- Add the peeled fresh prawns and cook for 2 minutes, turn off the heat and cover.
- Let the curry warm a little to better notice the flavors, serve it and enjoy.
