
COLOR SALAD
This colorful salad is wonderful, you are happy as soon as you see it, it is also refreshing and healthy, I love salads because they are a kind of base that supports everything.
I always make these types of salads in summer, with few ingredients, all raw and each one of a color.
It has purple onion, yellow pepper, cucumber (green), tomato (red) and grated carrot (orange), for me the grated raw carrot takes on another dimension, changes its texture and is much more pleasant to consume.
To give it a lot of flavor and that special grace that is expected in a salad, I make a dressing based on EVOO, Sherry vinegar, pepper, salt and dried herbs (oregano, thyme, mint).
I also like to add fresh parsley at the last minute.
An ideal dish to take at home or to take wherever you want and that, as I said before, holds everything and combines with everything.
I like to take this salad as a garnish for steamed fish or stewed or grilled meat.
Today I have completed it with eggs and sardines, but if you follow a vegan or vegetarian diet, you can combine it with legumes, some cooked chickpeas or some black beans they are great for you.

This salad is very summery, the ingredients are, so it is at this time of year when you have to prepare it and enjoy it to the fullest.
A characteristic of this dish is that it does not have lettuce or green leaves of any kind, it is common to associate the concept of "salad" with them, but it is clear that a salad does not have to be that way, a salad is nothing more than a mixture of ingredients, mostly vegetables, mixed and seasoned.
I like this salad to accompany almost everything, and it is also perfect to hug some legumes, it is the kind that is put in a glass jar and left to put in a museum

There is not much more to say about this dish, only that I like the game of textures, it is easy to prepare, the ingredients can be varied, it admits many different dressings and it is full of color, it is very beautiful.
Tomato, carrot and onion provide accessible carbohydrates to the microbiota.
I think that with that everything is said, about the ingredients that bears its importance lies in the fact that they are rich in nutrients and that they provide fiber that our microbiota can metabolize.
Pectin from tomato and carrot, mucilage from tomato seeds, and fructooligosaccharides (FOS) and inulin from purple onion.
In short, a very convenient combination for our intestines, which will help to improve and strengthen our intestinal flora.

COLOR SALAD
Ingredients
- 3 pear tomatoes
- 1 medium cucumber
- 1 small red onion Or half unit
- 2 carrots
- 1 yellow pepper Or green, or red
- fresh parsley
Dressing
- 2 cdita Dried oregano
- 1 cdita dry thyme
- 1 cdita dried peppermint
- 1 pinch black pepper Or white
- 1 pinch sea salt
- 2 cdas extra virgin olive oil
- 1 tbsp Sherry vinager Apple cider, apple cider, white wine, balsamic
Elaboration step by step
- Cut all the ingredients into small pieces, the more uniform they are, the better.
- Grate the carrots.
- Mix all the cut vegetables and carrots in a bowl.
- In another container, prepare the vinaigrette, mixing all the ingredients.
- Add the vinaigrette to the salad at the last minute and serve.
Notes
- It is ideal to leave the salad in the refrigerator for a while before consuming it, remember to add the dressing just when serving.
